Know as the ' Macaron Queen' of India, Pooja Dhingra, Pooja Dhingra, Pastry Chef, Founder & CEO, of Le15 Patisserie, has left us in awe with immaculate and artistic creations at her Parisian-style patisserie, Le15.  Well known for whisking some delectable desserts in her pantry, Pooja Dhingra has worked with plenty of celebrities and also designed Sonam Kapoor Ahuja and Anand Ahuja's majestic wedding cake. 


Being a master at her craft and catering to a wide audience Pooja believes in working closely with the bride and groom to create a wedding cake that reflects their personal preferences and style as a couple. She also adds that the season and location of the wedding play a part in finalising the design and flavour of the ideal wedding cake. 




Wedding Cakes Trends


Some of the hottest wedding cake design trends still include maximalist designs and high, majestic tiered white cakes. But pretty, organic blooms on wedding cakes and cakes decorated with fresh fruits have certainly been trending over the past few years, and Le15's creations are proof enough. 2023 shows big promise in the ways of creativity with couples breaking the mould. From colourful, new adaptations of vintage-inspired cakes to unexpected floral details and unique structural elements, wedding cakes are pushing the boundaries. One can even see the emergence of new colour experimentations for weddings.

"When designing wedding cakes, I like to give clients options for different tiered cakes, ranging from some simple design options to more elaborate ones. However, most customers like to have flowers on their wedding cakes, with custom cake toppers. Of course, we make a lot of wedding cakes with macarons too - that’s the signature of Le15. " But, what truly matters more is the flavour of the cake! "Chocolate-based cakes are always popular, either plain chocolate or a hazelnut crunch. A vanilla cake with a berry jam is also something that’s popular."

Chef Clément Nadeau, Chef sucré international at Ladurée, is a true visionary in the world of culinary artistry. For him, a dessert bar is a haven. Owing to his French roots, the chef told The Style List that a farandole of desserts still wins most of our hearts. However, one of the most popular desserts if you're having a wedding in France ought to be croquembouches. 








Dhingra likes to curate a dessert bar with different textures and flavours....some tarts, verrines, macarons, cupcakes, cake pops, and more! "I like to work with a variety of flavours, but also ones I know you can’t go wrong with. Something like chocolate is universally loved - but I like to combine that with things like hazelnuts, salted caramel, passionfruit, or a strawberry/raspberry jam."
